Blackberry Mousse

Sweet blackberries, tangy lime, and creamy luscious coconut cream in a decadent, refreshing, and perfect summer bite! This dairy free and Paleo/AIP friendly mousse is so easy and delicious, you will be making it weekly! I love to serve this as a light and cool summertime dessert when hosting friends and neighbors over for a barbecue, or just as an everyday indulgence!

This 1-step berry mousse is perfect just as is served with fresh berries, or freeze it in popsicle molds for a frozen treat, which is the way my kids love to enjoy this! Either way you will fall in love with this simple mousse, made with all whole food ingredients.

Why Blackberries are So Good For You!

If you are like me, summer means berries, lots and lots of berries! But did you know that in the off season, you can still enjoy these nutritious and sweet little babies? I always recommend eating foods that are in season, and blackberry season runs May through September with the peak being in June through July [1]. The reason you want to choose foods that are in season as they are the most nutritious and nutrient dense during this period of time, plus they are usually highly available!

So what do you do in the off season if you’re craving this sweet summery treat? Buy frozen! Frozen fruits and vegetables and my preferred way to enjoy foods that are out of season since they are usually picked and frozen during their growing season, offering a nutritious and great way to enjoy all year long!

Blackberries are a super nutritious dark purple food that is full of vitamins, minerals, fiber, water, and essential macronutrients.

  • Vitamin C: Essential in the absorption of non-heme iron and is a powerful antioxidant that reduces oxidative stress.
  • Vitamin E: Fat soluble vitamin (is absorbed when there is fat with it) that plays a role in vision, brain, and skin health [2], and is an antioxidant that neutralizes free radicals.
  • Vitamin K: Essential in clotting ability as is converted to K2 in the gut that supports healthy bones.
  • Calcium: The most abundant mineral in the body and is essential in maintaining health teeth and bones as well as heart, muscle and nerve function [3].
  • Manganese: Trace mineral that plays a role in metabolic pathways, blood sugar regulation and hormone regulation.
  • Fiber: Blackberries are very high in fiber and this is wonderful for your health. Foods high in fiber support a healthy digestive tract, healthy microbiome, support healthy blood sugars, and support healthy cholesterol.

So grab some beautiful blackberries and let’s get cooking!

Blackberry Mousse Ingredients

Makes 6-8 Servings

For the Blackberry Mousse

14.5oz can Full Fat Coconut Cream*

3 cups Blackberries, frozen or fresh

1/4 cup Pure Maple Syrup

2 Tbsp Fresh Lime Juice

1 Tbsp Lime Zest

1 Tbsp Pure Coconut Oil, melted

Pinch of Fine Sea Salt or Pink Salt (opt)

Lime Zest for serving (opt)

Unsweetened Shredded Coconut for serving (opt)

Coconut Whipped Cream

*For a thicker mousse, omit the coconut water that comes with the coconut cream

How to Make Blackberry Mousse

1. If you are using frozen blackberries, set them out about an hour before you begin making the dish to allow it to defrost some.

2. To a high speed blender, add the blackberries, coconut cream, maple syrup, lime juice, lime zest and coconut oil.

3. Blend on high speed for 60-90 seconds until creamy, smooth and slightly airy.

4. Fill small 4oz mason jars, ramekins, or any glass container and refrigerate at least 6-hours to overnight before enjoying!

5. Make the coconut whipped cream if desired

6. Top and Serve.

Q: Is it okay to add more maple syrup to make the blackberry mousse sweeter? My blackberries are a little tart.

A: To keep from thinning out the mousse too much, I’d add a few medjool dates, pitted and at room temperature if you’re looking to sweeten the mousse up a little bit more.
