Breakfast Sweet Potatoes

Have you ever tried a delicious, sweet and buttery sweet potato for breakfast? Paired with some of my homemade granola and some grass-fed butter, you have a match made in heaven!

Breakfast Sweet Potatoes

4-6 Small Sweet potatoes, rinsed

Toppings: 1-2 Tbsp Grass-fed butter

1/4 cup Paleo Granola

Fresh fruit

Directions:

Preheat oven to 425

Line a baking sheet with parchment paper. Using a fork, prick the potato on all sides.

Bake potatoes for approximately 45-60 minutes until tender.

Split lengthwise down the center and press ends together to “open” the potato and fill with butter, granola and berries!
