Chopped Greek Salad (Paleo, Whole30, Keto)
The perfect chopped summer salad loaded with juicy tomatoes, crisp cucumbers, tender olives, marinated artichokes and earthy onions dressed with a simple Paleo red wine vinaigrette! This easy and flavorful salad goes great with everything from Grilled salmon to Smoked chicken, and it delish as leftovers for tomorrow’s lunch. Keep this Greek salad Paleo and Whole30 friendly by omitting the feta and checking to make sure all your ingredients are compliant (the artichokes and vinaigrette ingredients). The scrumptious taste of summer is only a few chopped veggies away!

Why Cucumbers are So Good For You!
Cucumbers are a fantastic source vitamins, minerals, fiber and water! They are delicious prepared in a fresh salad, cucumber kimchi, or even eaten as a snack with creamy homemade hummus or an easy blue cheese dip!
Vitamins

Summer is salad season and this one is at the top of my repeat list. With tomatoes, cucumbers, and bell peppers being in season in the summer, chances are you can find some fresh, vine ripened veggies at your local farmer’s market or grocery store. Eating seasonally is a great way to increase the nutrient density of the foods you eat, plus there is just nothing like a fresh summer tomato ripened by the sun. The hardest part about making this salad is not eating all the goodies before they go into the bowl!
Chopped Greek Salad Ingredients:
1 Small Red Onion, thinly sliced
1 English Cucumber, diced
8oz Grape Tomatoes, halved
1 Medium Bell Pepper, diced
1/2 cup Kalamata Olives, pitted
3oz Crumbled Feta (Omit for Paleo/Whole30)
1/2 cup Marinated Artichokes, halved
1/4 cup Peperoncini, sliced
1/2 cup Red Wine Vinaigrette
1 Tbps Fresh Oregano, minced

Chopped Greek Salad (Paleo, Whole30, Keto)
Ingredients
- 1 Small Red onion thinly sliced
- 1 English Cucumber diced
- 8 oz Grape Tomatoes sliced in half
- 1 Medium Bell pepper diced
- 1/2 cup Kalamata Olives
- 3 oz Crumbled Feta omit for Paleo/Whole30/Dairy-free
- 1/2 cup Marinated Artichoke hearts halved
- 1/4 cup Peperoncini sliced
- 1/2 cup Red Wine Vinaigrette
- 1 Tbsp Fresh Oregano minced
Instructions
- Chop all the vegetables and add to a large bowl.
- Add the olives, halved artichokes, and the peperoncini.
- Add 1/2 cup of Red Wine Vinaigrette and toss well to coat.
- Top with crumbled feta (omit for Paleo/Whole30) and fresh minced oregano.
