Easy Mexican Street Corn

Tender roasted corn in a creamy dreamy chili lime sauce dancing with earthy Mexican cotija…yep, this is pretty much side dish perfection or the appetizer your dreams!  I love to serve this with everything from tacos to crispy crock pot carnitas and it doubles as a delicious and healthy dip for fresh cucumber slices or some organic corn chips.  Anyway you choose to enjoy it, you’re going to love all the delicious flavor and how quick and easy it is!

San Antonio spoiled me with all of the wonderful Mexican food we got to enjoy while living there. I really miss it sometimes and the next best thing I have come up with (besides just flying down there to eat) is my authentic Mexican street corn.  This dish is so easy and comes together in just a few minutes once the roasted corn is defrosted and ready to go! 

I love to use frozen produce in my dishes as a way to eat seasonally and keep up with a variety of foods in my whole food diet.  Frozen fruits and vegetables are picked at the peak of ripeness within their natural growing season offering a more tasty and nutrient dense food.  So when I am craving Mexican corn in the dead of the Minnesota winter, I reach for a bag of frozen roasted organic corn and get to have my favorite side dish I love so much!

Why Organic vs. Conventional Corn

Corn, it’s everywhere, it’s added to processed foods such as soups to yogurts, and is refined into high fructose corn syrup (HFCS) that is present in almost every single processed food item on your grocers shelves. Did you know that a majority of the corn products you are consuming are derived from either hybridized or genetically modified (GM) corn, and many of these are grown conventionally treated with toxic chemicals like glyphosate (RoundUp.)

Environmental Impact

Across the globe, over 80% of all the GMO crops that are cultivated have been modified against herbicides such as RoundUp.  This means that the crops have had their DNA altered so that they are resistant against chemicals like RoundUp allowing for these toxic chemicals to be sprayed on the crops, killing other plants and pests without harming the crop itself.  The problem with chemicals like glyphosate is that they are now part of the food you eat, and have given rise to “superbugs” and “superweeds” that have become resistant to it and can now only be killed with chemicals that are even more toxic like 2,4-dichlorophenoxyacetic acid (2,4-D, an ingredient in Agent Orange) shown to correlate with thyroid disorders, hormonal disorders, decreased fertility, birth defects, and cancer [1].

Human Impact

In recent studies, there have been indications of the negative impact GMO foods are having when consumed.  These foods are showing that they may have toxicity on organs, organ systems, and immune health [2]. Consuming foods that have been genetically modified exposes you to a slurry of toxic chemicals, like glyphosate, that has been shown to be carcinogenic [3]. 

Common GMO Foods

The most common GM foods you find in America consist of, but are not limited to canola, corn, soy, and sugar beet (white sugar).  These foods are found in almost every single processed food found on your grocers shelves and freezer section.  Not only are these foods highly inflammatory and should be avoided, but they have been so heavily refined that they lack nutrients as well..

So grab a bag of roasted organic corn and let’s get cooking!

Easy Mexican Street Corn Ingredients

Makes 6-8 servings

4 cups Frozen Fire Roasted Organic Corn

1/2 cup No Sugar Added Mayonnaise

1/4 cup Fresh Lime Juice

1 Tbsp Chili Powder

1/4 tsp Chipotle Powder (opt)

1 tsp Fine Sea Salt or Pink Salt

1/2 tsp Ground Black Pepper

1/2 cup Grated Cotija Cheese

1/4 cup Packed Fresh Cilantro, finely chopped

How to Make Easy Mexican Street Corn

1.  Defrost the corn from the freezer overnight in the refrigerator or for an hour or two at room temperature.

2.  In a medium bowl combine the mayonnaise, lime juice and spices mixing well with a spatula.

3.  Add the roasted corn, cotija or parmesan cheese and cilantro, mixing well to combine.

Q: Should I heat the corn in the microwave to defrost it?

A: No, that may cook some of the corn making it rubbery, allow the corn to thaw naturally in the fridge or on the counter.

Q: What spices do you recommend to make this a little spicer?

A: My favorite way to spice this up is to add some chipotle, hatch, or ancho chili powders, or you can even chop up a jarred chipotle chili and add it!

Q: What if I can’t find cotija cheese?

A: That is okay! Unfortunately, it’s not the easiest cheese to find sometimes, you can go with a grated parmesan and still get an amazing and delicious flavor!
