Why Bananas are So Good For You!

Bananas originated in Southeast Asia and are grown in tropical climates around the world.  Banana plants aren’t actually trees but are part of the Musa family of plants that also contains plantains. The bananas that we know and love to eat and bake with are Cavendish bananas while plantains are a cooking variety that are starchier and less sweet.

Bananas are full of nutrients and fiber making them a great part of a whole food diet providing a great source of low-glycemic carbohydrates to keep you going!

Fudgy Chocolate Chip Banana Bread Ingredients

Makes 1 loaf

3-4 Ripe Bananas (about 1.5 cups), mashed
½ cup Unsweetened Applesauce, room temperature
¾ cup Coconut Sugar
3 Large Eggs, room temperature
½ cup + 1 tsp Grass-fed Unsalted Butter, softened
1 ½ tsp Pure Vanilla Extract
1 ½ cups Unbleached Organic AP Flour (245g)
½ cup Unsweetened Cocoa Powder (55g)
½ cup Unflavored Collagen Protein Powder (opt)
1 ½ tsp Pure Baking Soda
1 tsp Fine Salt
1 + 1/4 cup Semisweet Chocolate Chips 

How to Make Fudgy Chocolate Chip Banana Bread

1. Preheat the oven to 325 degrees for convection, 350 degrees for conventional.
2. Grease the bread pan with 1 teaspoon of butter or ghee.
3. Add the flour, cocoa powder, collagen powder, salt and baking soda to the mesh strainer (do it in batches if necessary) and sift over a sheet of parchment paper, set aside.
4. In a medium bowl, mash the bananas with a fork, set aside.
5. In a large bowl with a hand mixer or using a standing mixer with the paddle attachment, beat the sugar and butter for 30-60 seconds until fluffy.
6. To the sugar and butter, add the eggs 1 at a time and mix in until just combined.
7. Add the bananas, applesauce, and vanilla and mix until combined.
8. Add the dry ingredients to the bowl with the wet ingredients and mix with a spatula until just combined.
9. Stir in 1 cup of chocolate chips then transfer the batter to a bread loaf baking dish.
10. Optional: sprinkle the top of the batter with the remaining 1/4 cup of chocolate chips.
11. Bake for 60-70 minutes until toothpick comes out clean.
12. Cool completely before slicing.

Q: Can I use cacao powder in place of the Dutch cocoa powder?
A: Yes, you won’t get the same rich fudgy-ness in the banana bread, however, it will still be absolutely delicious!

Q: Can I use ghee in place of the butter for this?
A: Yes, you can! Just make sure it is at room temperature.

Q: Can I substitute regular protein powder in place of the collagen protein powder?
A: You can definitely try! I prefer the collage protein powder since it does not have any other added ingredients, but I’m sure another protein powder will turn out nicely as well!
