Gluten-Free Almond Joy Granola
I am a huge breakfast lover and granola is one of my favorite things to make and eat! I love the bittersweet chocolate, crunchy almonds and fragrant coconut in this simple, whole food, nutritious granola recipe.

Gluten-Free Almond Joy Granola
1/2 cup Unsweetened applesauce
1/2 c up Raw Almond butter
1/2 cup Pure Maple syrup
1 tsp Vanilla
1/2 tsp Sea salt
1/4 cup Cocoa powder
3 cups GF Sprouted Rolled Oats
2cup + 1cup Unsweetened Flaked coconut
1 cup Slivered Almonds
1 cup Sliced Almonds or pecans
2 cups Cacao nibs or mini dark chocolate chips (opt)
Directions:
Preheat oven to 275
In a large bowl combine applesauce, almond butter, vanilla, maple syrup, salt and cocoa powder. Stir in oats, 2 cups of coconut, and almonds. Spread in a thin layer over a parchment lined baking sheet and bake 60-75 minutes stirring every 15-minutes until granola has dried out and slightly browned.
Let granola cool slightly before adding the coconut and chocolate nibs/chips and stirring well and then cooling completely. The mini chocolate chips will melt and form little irresistible clumps that I cannot stop eating!
Almond Joy Granola is easy to enjoy on it’s own with a bowl of cold milk, over ice cream or yogurt!
