Grilled Lemon Dill Salmon
Simple oven roasted delicious buttery salmon paired with tart lemon and earthy dill, what more could you want? Easy enough for a weeknight meal and perfect for lunch the next day! Try it on a bed of greens with roasted beets for a fresh and nutritious salad!

Grilled Lemon Dill Salmon
2lb King or Atlantic Salmon filet
1/4 cup Fresh Lemon juice
1 Tbsp Lemon zest
1/4 cup Fresh Dill, minced
2 tsp Garlic, finely minced
1 tsp Sea Salt
1/2 tsp Black Pepper
1 Tbsp EVOO
2 tsp Ghee
6-8 Lemon slices
Directions:
Preheat grill or oven to 425 with an oven safe skillet inside (I really like my cast iron grill/griddle).
Make sure your salmon is deboned and scaled if you plan on eating the skin (although you can eat the scales on the salmon), which I highly recommend due to the rich Omega-3’s!!.
In a small bowl, mix together lemon juice, dill, garlic, salt, pepper and EVOO, spread and cover fish.
Add ghee to skillet and place fish skin side down. Close grill and cook for 15 -20 minutes depending on your preference of doneness. Remove from heat and serve. Enjoy with your favorite sides or over a bed of greens with Lemon Poppyseed Vinaigrette!
