Honey Carrots with Rosemary (Paleo)

Sweet tender carrots covered in a decadent buttery honey glaze are the sweet and bright side dish you need for all your holiday meals. The humble carrot is often overlooked as a delectable and tasty side dish, but this recipe is here to change your mind! With a few simple, whole food ingredients that come together in a magical sweet and savory way, these carrots with raw honey and earthy rosemary are perfection in every bite. I love to roast mine to al dente so they have just the right amount of bite to tenderness for that gorgeous, beautiful texture.

Many brands of commercial honey you find in stores are not pure and are often diluted with and contain corn syrup or other inflammatory sweeteners. 

Why Carrots are So Good for You!

Packed with nutrients, fiber and antioxidants carrots are a powerhouse food full of benefits. 

Carrots contain an antioxidant known as a carotenoid called beta-carotene, which is converted to vitamin A when consumed, this is what give carrots their beautiful orange hue. Vitamin A is an essential vitamin that supports eye health, immune health, bone health and reproductive health [2].

Carrots contain Biotin, vitamin B6 and vitamin K1:

Biotin, which used to be called vitamin H, is necessary in so many ways for your health and bodily functions.  It is essential during pregnancy and is vital as the embryo grows.  Biotin is responsible in keeping your hair, skin and nails healthy as well as supporting your liver health and nervous system. 

Vitamin B6 is beneficial for your immune system, mood, circulation, and so much more! 

Vitamin K1 is necessary in helping support your body’s ability to clot and it is converted to vitamin K2 in your gut.  K2 is essential in supporting bone and skin health.

Also found in carrots is potassium, which is the third most abundant mineral found in your body.  It is an electrolyte that supports your heart health, hydration, and a healthy blood pressure [3].

Now let’s talk fiber, we all need it, and carrots have both soluble and insoluble fiber to help support your health and digestion!  Insoluble fiber, like the cellulose found in carrots, support healthy digestion and regularity!  Soluble fiber, like the pectin found in carrots, support a health blood sugar, healthy cholesterol and supports a healthy microbiome.

Honey Carrots with Rosemary Ingredients

Serves 4-6

4-6 Large Carrots, halved or quartered so they are about 1/2” thick

1 Tbsp Grass-Fed Ghee, melted

1/4 cup Raw Local Honey*

1 Tbsp +1 tsp Fresh Rosemary, minced

1 clove Garlic, finely minced

1/2 tsp Ground Black Pepper

1/2 tsp Fine Real Salt

1/4 cup Pomegranate Seeds (opt)

*Omit honey for Whole30 and add 1-2 more tsp of ghee if desired

How to Make Honey Carrots with Rosemary

1. Preheat your oven to 425 degrees

2. In a large bowl, mix together the ghee, honey, 1 Tbsp rosemary, salt and pepper. 

3.  Rinse and peel the carrots, slicing them lengthwise so they are approximately 1/2″ thick.  Add the carrots to the honey mixture in the bowl and toss, coating the carrots well.

4.  Lay the carrots in a single layer on a large rimmed baking sheet and bake for 15-18 minutes until tender but not mushy.

5.  Remove from oven and transfer to a plate.  Top with more fresh minced rosemary and fresh pomegranate seeds.

Ingredients
  

  • 4-6 Large Carrots halved or quartered so they are about ½” thick

Q: Why are my cooked carrots hard?

A: You probably needed to cook them a little longer. Cook times can vary depending on how hot your oven gets and how big the carrots are.

Q: Can I cut the carrots at an angle instead?

A: Yes! Just adjust the cook time as smaller cuts will cook faster!

Q: How come some of the carrots cooked through and others didn’t?

A: Your pan may be overcrowded. Make sure to lay them in a single layer on the baking sheet, using two if necessary.
