Katie’s Lemon Roasted Potatoes
These are my daughter’s favorite way to have potatoes, simple lemon roasted potatoes that pair perfectly with chicken, fish, and beef.

Katie’s Lemon Roasted Potatoes
4-6 Dutch potatoes, cut into wedges
2 Tbsp duck fat
1 tsp oregano
2 Tbsp lemon juice
2 Tbsp lemon zest (I love a lot, some like a little)
2 tsp sea salt
1 tsp black pepper
Lemon wedges (opt)
Directions:
Preheat oven to 450
In a large bowl add potatoes, duck fat, oregano, lemon juice and toss. Spread in a single layer over a baking sheet. Bake for 15-20 minutes until golden brown.
Remove from oven and toss with zest. Bonus: serve with a lemon wedge for more lemony zing!
