Lemon Shallot Vinaigrette (Paleo, Whole30)

This dressing is perfect all year long with tart lemon, tangy whole grain mustard, and earthy shallots, it pairs beautifully with summer and winter salads! I love how quick and easy this simple lemon vinaigrette is, it is full of good for you ingredients, and none of the inflammatory ones found in most of the dressings you find at the store. If you are looking to up your salad game, this vinaigrette also doubles as a tasty and delicious marinade for chicken, fish, or shrimp!

It is still winter here in Minnesota and I have been missing my salads.  I wanted a balanced citrusy vinaigrette to complement a hearty and filling Tuscan kale and Brussels sprout salad I had made, and this was the perfect partner.  The best part was having the left over dressing for my salads throughout the rest of the week!  I know you will fall in love with this simple lemon shallot vinaigrette as much as my family has!

Why Lemons are So Good For You!

We all know and love these beautiful tart and sour fruit, but did you know that they are packed with antioxidants and have lots of benefits for your health!

Lemons contain vitamin C, a powerful antioxidant that plays a role in neutralizing free radicals and reducing oxidative stress.  But what does that mean? Free radicals are the byproducts produced by the body from its normal metabolic function and environmental exposure to pollution, smoke, and chemicals [1].  A buildup of free radicals in the body leads to oxidative stress, which in turn leads to chronic symptoms and disease. 

Antioxidants combat free radicals by neutralizing them (literally paring with an extra electron to neutralize the charge) and reducing oxidative stress. 

Lemons are also great for your health in other ways.  They have compounds that have shown to support liver health, have positive effects again cancer, heart disease, and inflammation [2].

There are so many easy ways to add more lemons to your diet:

  • Lemon Water
  • Salads: just drizzle it with some EVOO or make a fresh dressing
  • Juicing: use the whole fruit and add to recipes or tea
  • Smoothies: Add 1/4-1/2 of a whole lemon
  • Add it to fresh cut fruit: it reduces oxidation and adds more vitamin C

Lemon Shallot Vinaigrette Ingredients

Makes approximately 1 cup of dressing

1/2 cup Fresh Lemon Juice

1/2 cup Cold Pressed, Unfiltered EVOO

1 Tbsp Shallot, finely diced

1 Tbsp Organic Pure Maple Syrup

1 Tbsp No Sugar added Whole Grain Mustard

1/2 tsp Fine Sea Salt or Pink Salt

1/2 tsp Ground Black Pepper

How to Make Lemon Shallot Vinaigrette

1. In a medium bowl, add all of the ingredients and mix well with a whisk.

2. Pour into a jar with a lid and let it sit out for at least an hour before using.

3. Enjoy on salads or as a delicious marinade!

Q: Should I heat the vinaigrette if the EVOO has solidified?

A: Remove from fridge 1-hour before using to allow EVOO to come to room temperature if it has solidified, if you’re in a hurry, set in a bowl of hot water to gently heat.

Q: Could I sub out the shallot for some garlic?

A: Absolutely. Just keep in mind it is a lot more pungent, so only had a small amount and taste. You can always add more if you like, but it’s hard to take it out once it’s in there!

Q: How long will lemon vinaigrette keep?

A: In general, I usually only make enough dressing for a few days, and usually discard any leftovers after a week.
