Lucas’s Gluten-free Banana Muffins

My amazing and “loves to be in the kitchen” son came up with this delicious, wholesome, and nutritious muffin recipe that is make with whole ingredients and is a perfect way to start your day!

Lucas’s Gluten-free Banana Muffins

Dry ingredients:

2 cups Rolled oats, blended into flour

1/2 tsp Baking soda

1/2 tsp Baking powder

1 tsp Ground Cinnamon

1/2 tsp Sea salt

Add-ins:

1/2 c chopped walnuts (opt)

1/2 c raisins (opt)

 

Wet ingredients:

4-5 Bananas, mashed

1/2 cup Almond butter

1/2 cup Pure Maple syrup

2 Chia eggs (2 tbsp chia, ground + 5 tbsp water)

1 tsp Vanilla

Directions:

Preheat oven to 325

Line cupcake pan with paper liners.

In a small bowl combine all dry ingredients and stir with a fork. In a medium bowl combine all wet ingredients and mix well. Stir dry ingredients into wet ingredients and stir to combine.

Fill liners and bake 15-17 minutes until toothpick comes out clean. Cool and enjoy!
