Why Bananas are So Good For You!
Bananas originated in Southeast Asia and are grown in tropical climates around the world. Banana plants aren’t actually trees but are part of the Musa family of plants that also contains plantains. The bananas that we know and love to eat and bake with are Cavendish bananas while plantains are a cooking variety that are starchier and less sweet.
Bananas are full of nutrients and fiber making them a great part of a whole food diet providing a great source of low-glycemic carbohydrates to keep you going!

Paleo Banana Bundt Cake Ingredients
Serves 12-16
Paleo Banana Bundt Cake
2 Medium Bananas (approx. 1 cup mashed)
1 tsp Pure Vanilla Extract
1 tsp ACV
¾ cup Brown Coconut Sugar
¼ cup Unsweetened Coconut Manna, melted
¼ cup Plant Milk
4 oz Unsweetened Coconut Yogurt
1 ½ cups Fine Almond Flour
½ cup Coconut Flour
1 cup Arrowroot Starch
1.5 tsp Pure Baking Soda
1 tsp Ground Cinnamon
1/2 tsp Fine Real Salt
1 tsp Grass-Fed Ghee or Unrefined Coconut Oil*
*Use to grease the bundt pan
Paleo Chocolate Glaze
3/4 cup Dark Chocolate Chips or Hu Chocolate Gems
¼ cup Unsweetened Coconut Manna
How to Make Paleo Banana Bundt Cake
1. Preheat the oven to 325 degrees Convection (350 Conventional) and grease the bundt pan and set it aside.
2. In a medium bowl, combine all the dry ingredients and stir with a fork or whisk to mix well.
3. In a large bowl, mash the bananas with a fork then whisk in the eggs and coconut sugar until combined.
4. Whisk in the coconut manna, plant milk, vanilla and ACV, mix well.
5. Transfer the dry ingredients to the banana mixture and whisk until well combined.
6. Pour the batter into to the bundt pan and bake for 25-30 minutes until lightly browned and a toothpick comes out clean.
7. Cool completely on a wire rack in the bundt pan before flipping onto a plate and adding the glaze.
8. For the glaze, add the chocolate and coconut manna to a small bowl and microwave in 30-second intervals until melted (usually takes about 2-minutes). Drizzle the glaze over the cooled banana bundt cake.
