Paleo Hashed Out Sweet Potatoes
Savory bacon hash stuffed into a perfectly baked sweet potato is a nutrient packed breakfast to fuel your body all morning long!

Paleo Hashed Out Sweet Potatoes
3-4 Sweet Potatoes*
1/2 lb No sugar, uncured bacon, diced
1/2 Red onion, diced
1 Bundle Swiss chard, rinsed and chopped
2 Cloves garlic, finely minced
1/2-1 tsp Sea salt
1/4 tsp Crushed red pepper (opt)
1/4 tsp Black pepper (opt)
*bake the night before for a quick breakfast the next day
Directions:
Preheat oven to 425
Line a baking sheet with parchment paper. Using a fork, prick the potato on all sides.
Bake potatoes for approximately 45-60 minutes until tender.
In a skillet, cook bacon over medium heat to your preference. Remove and drain on a paper towel. Reserve 1 Tbsp bacon fat and sauté onion over medium heat for 3-5 minutes until soft.
Add garlic, cook for 30 seconds then add Swiss chard. Sprinkle in salt, red pepper and black pepper and sauté until Swiss chard has wilted, about 3-5 minutes.
Split sweet potato lengthwise down the center with a fork and press ends together to “open” the potato and fill with hash!
