Paleo Piña Colada Energy Bites

These Paleo and Whole30 friendly Pineapple Energy Bites are nutritious and taste like the tropics! They are easy to make and are a perfect snack for the whole family!

Paleo Pineapple Energy Bites

8 oz Dried Pineapple, unsweetened

6 Medjool dates, pitted

1.5 cups Unsweetened Flaked coconut

1 cup Raw Cashews

1/2 cup Raw Macadamia nuts

1/4 cup Raw Almond butter

1/4 tsp Sea salt

1/2 tsp Vanilla

1/2 cup Shredded coconut (opt)

Directions:

In a medium bowl cover and rehydrate pineapple with cool filtered water for about 20-minutes. Squeeze out the water and set aside.

In your food processor, pulse dates to break down a little. Add pineapple and remaining ingredients except shredded coconut. Process, stopping to scrape down as needed, until a “chunky” dough forms.

Use a small scoop to roll into 1.5” balls and cover in shredded coconut. Store in an airtight container in the refrigerator up to a week…if they last that long!
