Paleo Steak and Zucchini Tacos

These grilled steak and zucchini tacos are perfect for taco Tuesday and Cinco de Mayo. They are Paleo, Whole 30 and AIP friendly! Top with Strawberry Mango Salsa and avocado and your taste buds will explode!

Paleo Steak and Zucchini Tacos

1-1.5 lb flank steak

1 Tbsp duck fat

2 Zucchini, cut into 1/4” strips

1 Red onion, sliced into half moons

1 Clove garlic, minced

1 1/2 tsp Sea salt

1 tsp black pepper (omit for AIP_

Butter lettuce

Strawberry Mango Fruit Salsa

Avocado slices

Directions:

Preheat grill to 425

Season both sides of the steak with salt and black pepper. Grill to your preference, I like mine medium rare so I cook it for about 4-7 minutes per side depending on thickness. When steak is finished, remove from heat and let sit for 5 minutes to rest. Slice against the grain.

In a skillet over medium high heat, add duck fat and onion and sauté for about 3-minutes. Add zucchini and cook for another 5-minutes until softened. Turn off heat, add garlic, and season with sea salt, stirring to combine.

Layer ingredients over butter lettuce and enjoy!
