Paleo Vanilla Granola
I love this Paleo granola recipe that is great with milk or plant milk, yogurt, ice cream, or as a snack on it’s own!

Paleo Vanilla Granola
1/2 cup Unsweetened Applesauce or mashed ripe bananas
1/2 cup Unsweetened Nut butter (I use almond or sunflower)
1/2 cup Pure Maple syrup or Honey
2 tsp Pure Vanilla
2 tsp Ground Cinnamon
1/2 tsp Fine Sea salt
3 cups Unsweetened Shredded Coconut
3 cups Seeds or Nuts in any combination (this has pepita, sunflower, and almond)
Directions:
Preheat oven to 275 degrees
Mix all wet ingredients in a large bowl. Add cinnamon and salt, stir until combined. Add all dry ingredients and stir well.
Spread evenly in a thin layer over a rimmed baking sheet and bake for about 90 minutes (give or take) until evenly toasty brown, stirring every 15-20 minutes to keep it from burning.
Cool completely and store in airtight container up to 2 weeks in your pantry.
