Perfect Steamed Beets

Gorgeous sweet and tender beets are just a hop, skip and jump away! This easy and simple recipe will give you the perfect beets for anything! I love to have them on a crisp green salad, enjoy them as a lovely nutritious side, or even make a tantalizing beet salad with them. By steaming them instead of boiling them, the beets turn out beautifully juicy and perfectly al dente.

Adding beets to your diet at least once a week has so many health benefits (more below.) They support many processes and functions plus are a fantastic source of fiber to keep our GI tracts happy and optimized! I usually steam a bunch of beets every week and keep them on hand in the refrigerator to snack on or add to other dishes. If you find some with the beet greens still attached, buy them! The beet greens are super nutrient dense, are loaded with potassium, and are great to add into smoothies!

Why Beets are So Good for You!

If you already like beets, get ready to fall in love with these nutrient packed powerhouses!!

Beets contain vitamins C, B6 and a good amount of B9 (folate.)

  • Vitamin C is a powerful antioxidant that works to neutralize free radicals and reduce oxidative stress that can lead to disease.
  • Vitamin B6 is essential in a healthy and strong immune system [1].
  • Folate is an essential B vitamin that is involved metabolizing carbohydrates into energy, the production of our red and white blood cells, and is crucial during periods of growth in our lives: during pregnancy, infancy, and adolescence.

Beets have an array of minerals too!

  • Magnesium: Essential mineral in muscle and nervous system health.
  • Manganese: Essential in carbohydrate metabolism and in supporting healthy blood sugars.
  • Iron: Essential in making hemoglobin and supporting your immune system.
  • Copper: Key in the formation of red blood cells.
  • Potassium: Essential mineral in kidney and hearth health.

Beets contain both soluble and insoluble fiber to support a health GI tract as well as a powerful antioxidant called betalains [2], that helps to reduce free radicals and reduce oxidative stress!

But did you know that one of the best parts of eating beets? They support your body’s ability to absorb the essential fatty acids in your diet. The betaine found in both fresh and cooked beets is a nutrient that promotes the flow of bile supporting fat emulsification leading to increased absorption.

So grab some of these gorgeous beauties and let’s get cooking!

Perfect Steamed Beets Ingredients

3-6 Medium Beets (any color is fine)

1 1/2 cups Filtered Water

Oven safe pot with a lid

How to Make Perfect Steamed Beets

1. Preheat your oven to 325 degrees

2. Rinse the beets well under cold water, using a veggie scrub brush to get all the dirt off the beets.

3. Trim off the greens (be sure to keep them for smoothies or egg and veggie scrambles) and any long roots.

4. Place them into a small to medium oven safe pot with a lid and add about 1.5 cups of fresh filtered water. You basically want to cover the bottom about and inch up the beet, do not submerge them.

5. Bake for 60-90 minutes until your beets are tender and cut easily with a knife.

6. Remove the pot from the oven and allow the beets to cool completely.

7. Gently peel the skin away, you can do this with a knife but I like to use my hands so I don’t waste any of the beets by cutting too much off. The skin will peel right off.

8. Dice or slice and enjoy!
