Quick Spinach Salad with Warm Bacon Vinaigrette

This is an all time favorite salad in my home and what sets it apart is the savory and tangy warm bacon vinaigrette.

Quick Spinach Salad

8-10 cups Baby Spinach

1/2 cup Grape Tomatoes, halved

1/2 White Onion, thinly sliced

1/2 cup Feta Cheese (omit for Paleo/Whole30)

1/2 cup Warm Bacon Vinaigrette

Warm Bacon Vinaigrette

2 Tbsp Bacon fat (I reserve mine from no sugar bacon in a small mason jar)

2 Tbsp ACV or Red wine vinegar

1.5 tsp Whole Grain mustard

1/8 tsp Sea salt

Pinch of black pepper

Directions

For Vinaigrette:

Heat a small skillet over low heat. Add all ingredients and whisk together. Keep warm until ready to serve.

For the Spinach Salad:

In a large bowl, toss ingredients with warm bacon vinaigrette and serve immediately!
