Quick Turkey Chili
This quick and delicious turkey chili is a light and tasty way to eat up all that turkey from Thanksgiving!

Quick Turkey Chili
2 Tbsp Ghee or EVOO
4 cups Leftover turkey or Roasted chicken (can use rotisserie), deboned and shredded
1 Red bell pepper, deseeded and diced
1 Poblano pepper, deseeded and diced
1 White onion, diced
2 cans Cannelloni beans, drained and rinsed
16oz Green salsa
4 cups Unsalted Chicken Bone Broth
1 Tbsp Smoked paprika
2 Tbsp Ground cumin
1 Tbsp Sea salt
1 tsp Black pepper
Optional Toppings:
Cilantro
Lime
Avocado
Sour Cream/Crema
Salsa
Shredded cheese (my family loves pepper jack)
Green onion
Bacon
Corn Chips
Directions:
In a stock pot over medium heat, sauté peppers and onions in oil for 5-7 minutes. Add salsa, stock, turkey or chicken, beans and spices.
Bring to a low simmer and cook for about 20-minutes for flavors to come together, prep toppings while you wait.
Top with diced bacon, green onion, and more! Enjoy!
