Roasted Garlic Fingerling Potatoes (Paleo, Whole30)

If you are like me and have certain mains on “repeat” because it’s so easy and delicious, you want a side that is going to outshine everything and this is it! Tender and creamy fingerling potatoes that are baked to crispy perfection and then covered in an earthy garlic butter, yum, right? These super easy potatoes cook really quick and are on the table in less than 30-minutes. Your family will love these and probably forget about everything else on their plates!

The best part of this dish is the earthy bite of the fresh garlic in a decadent rich butter sauce, slightly heated over warm, velvety potatoes.  To me, it is just perfection, especially when you add in the fresh, piney rosemary and a pinch of red pepper flakes.  When looking for a Paleo, Whole30 and gluten free friendly side dish for your weeknight meals or your next dinner party, try these savory and delicious potatoes.

Why Fingerling Potatoes are So Good For You!

I love potatoes, not just because they are so tasty and can take on anything you throw at them, but because they are so nutritious and support a healthy gut.  I had a variety of fingerlings from my local Co-Op so let’s look at each one and learn about all their benefits!

Creamer potato:  Delicious and creamy on the inside with a delicate and nutritious skin making it a favorite potato in households and restaurants.  These little golden nuggets are loaded with vitamin C, potassium, and fiber!  Vitamin C is a powerful antioxidant that reduces oxidative stress and helps to reduce inflammation.  The potassium [1] found in creamer potatoes is essential in the electrolyte balance within your body supports hydration, healthy kidneys and blood pressure.  Fiber is an essential nutrient that supports a healthy and optimized digestive system as well as the health of the microbiome.

Red Fingerling: They say you eat with your eyes first, and these gorgeous beauties are definitely a sight to behold.  Once cooked, red fingerlings have this gorgeous pale rose hue that is absolute perfection.  The nutty flavor and creamy texture will set your taste buds on fire while the nutrients nourish your body.  Filled with more potassium than a banana and vitamin C to help support a healthy immune system, you get more than meets the eye with these!

Purple Fingerling: Purple has always been my favorite color and these gorgeous gems are a spectacular vibrant purple even after they have been cooked.  They have a dreamy texture that is more moist than a russet potato with a slight earthy undertone.  Nutrient rich, these babies are packed with copper, iron, manganese, potassium, and Vitamins B6 and C!

So grab some fingerling potatoes and let’s get cooking!

Roasted Garlic Fingerling Potato Ingredients

Serves 4-6

1.5  lb fingerling potatoes

1 Tbsp + 1 Tbsp ghee, melted*

2 tsp garlic, minced

2 tsp rosemary, minced

1/4 tsp crushed red pepper flakes (opt)

1 tsp fine sea salt

3/4 tsp ground black pepper

* Substitute EVOO or Avocado Oil for Vegetarian/Vegan Options

How to Make Roasted Garlic Fingerling Potatoes

1.  Preheat the oven to 425 degrees

2.  Rinse and clean the potatoes under cool water with a veggie brush to remove any dirt and debris, dry and set aside.

3.  In a large bowl add 2 teaspoons of ghee, 1 teaspoon of fine sea salt and 1 teaspoon of black pepper, stir to mix.

4.  Add the potatoes to the bowl and stir or toss to evenly coat the potatoes.

5.  Bake for 20-25 mins until the potatoes are tender.

6.  While the potatoes are roasting, to a small bowl, add 1 Tablespoon of melted ghee, garlic, rosemary, pepper, and stir to combine. 

7. When the potatoes are done baking, plate and then drizzle the garlic butter sauce over the hot potatoes.

Serve immediately and enjoy!

Q: Why are some of the potatoes fully cooked and others are still hard in the middle?

A: Not all the potatoes are the same size and this will impact the cooking time for each potato.  Smaller ones will cook faster than the larger ones, make sure they are not crowding the pan and remove smaller potatoes to prevent burning if necessary.

Q: Can I roast the potatoes with the garlic butter sauce?

A: You can, but you will lose some of the vibrance of the garlic.

Q: Can I make this ahead of time?

A: Yes, you can par boil the potatoes so they do not take as long to cook, but you will ideally serve these hot so the potatoes heat the garlic butter sauce to create a dreamy bite!
