Summer Peach & Prosciutto Salad
Looking for the perfect salad to pair with my Lemon Poppyseed Vinaigrette…look no further. This salad has all the summer flavors: sweet, salty, tangy, earthy, and unbelievably delicious!

Summer Peach & Prosciutto Salad
3 cups Baby Arugula
3 slices Prosciutto
1/2 cup Fresh Peaches, sliced
1 Tbsp Red onion slices
1-2 Tbsp Crumbled Goat cheese (opt)
1 Tbsp raw Pepitas/pumpkin seeds (opt)
Directions:
In a large bowl add arugula and 1 Tbsp of my Lemon Poppyseed Vinaigrette and lightly toss. Add to a plate or bowl and top with remaining ingredients. Enjoy!
